Feeling Chili?

With all of the craziness of school and finals I haven't had much time to post my kitchen adventures and otherwise - but better late than never!
It has gotten COLD for this Texas girl - and chili and is the staple dinner of busy weeks.
I'm not much for measuring but this weeks chili included:
1 can of black beans + 1 can of pinto beans + 1 small can of tomato sauce + eyeballed amount of vegetable broth + carrot + onion + green pepper + red pepper + 1 can of diced tomatoes
OPTIONAL DELICIOUSNESS: cornbread in the bottom of the bowl and melty cheesy wonderfulness on top.
I find it very important to take time for yourself even in the busiest weeks. Take an hour of your day to work out. Take an hour of your day for dinner (and possibly wine) at your dinner table. Eat vegetables, take time to reflect and be thankful. Have a fantastic week, foodies, stay warm! xoxo
